Vegan Whole Wheat Chocolate Chip Cookies

These vegan whole wheat chocolate chip cookies are the perfect snow day distraction

Vegan Chocolate Chip Cookies

We have been having lots of cold weather and snow days here.  We have had 7 snow days, the first one being the day before Christmas vacation.  And then we had 3 days after Christmas vacation was supposed to be over.  Then two more this week.  We have had lots of beautiful snow but unfortunately it has been too cold to play in it much.

I am a bit of a homebody and enjoy staying home, especially when it’s frigid outside and I have 3 kids to drag along, so I have actually enjoyed the snow days.  However, the kids start to get cabin fever and begin to climb the walls.  Or drive you up them.

Cookies to the rescue.  They can help you mix up the dough, while stealing a few licks.  One of the advantages of vegan baking.  Then they can look forward to a warm and gooey chocolate chip cookie.  All in all you’ve occupied them for close to half an hour.

I’ve tried a few different recipes for vegan chocolate chip cookies and have finally found the winner.

These cookies are so good no one will guess that they are vegan.  And they are moderately healthy.  Well, as far as chocolate chip cookies go.

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: About 1 dozen cookies

  • 1 cup white whole wheat flour
  • 1/2 tsp sea sale
  • 1 1/2 Tbsp ground flax seeds
  • 1 1/2 tsp baking powder
  • 1/2 cup coconut sugar (or any other sugar you like)
  • 1/2 cup melted coconut oil
  • 2 Tbsp almond milk
  • 1/2 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 1/2 cup dairy free dark chocolate chips (I like Enjoy Life Mega Chunks)

  1. Preheat oven to 375 degrees
  2. In a large bowl mix the flour, salt, baking, powder, and flax seeds.
  3. In a medium bowl mix the melted coconut oil, almond milk, sugar, vinegar, and vanilla.
  4. Add the wet ingredients to the dry.
  5. Fold in the chocolate chips. The dough will be thick.
  6. Pop the dough in the fridge for about 15 minutes to firm up.
  7. Roll about 2 Tbs of dough into ball and place on cookie sheet.
  8. Gently press cookies down with palm of hand to flatten them a bit.
  9. Bake for 10-12 minutes. They will still look a little gooey in the center. Don't worry, they will firm up as they cool. You don't want to over bake them.

Note: I tried a batch of these using Earth Balance sticks instead of the coconut oil and we preferred the coconut oil version.

If we have too many more snow days we may have to drag out the Play-doh.

But first we will make more cookies.

Never Miss A Recipe!

  1. Oh look at those mega chunks! These look crazy yummy :)

  2. Chocolate cookies are always my favorites, yummy….Great pictures Jamie!

  3. Great recipe! Best looking choc-chip cookies I’ve pulled out of the oven since we became vegan. Used whole wheat pastry flour (not white) because it’s what I had on hand, but I think the color helped trick the eye with the browning that’s more typical of non-vegan cookies. Also added some chopped toasted walnuts for fun. My hard-to-please husband said this is the new family recipe. Thank you!
