Vegan Tater Tot Nachos

These vegan tater tot nachos are a quick meal the whole family will love

I made these nachos for our dinner on New Years Eve.  They are festive enough for a party and easy enough for a busy weeknight.  We aren’t big New Years Eve party animals.  We had this delicious dinner, played with the kids for a bit and had some yummy snacks.  At 8:00 we pretended it was midnight (even set the clock ahead!) and had a toast with the kiddos.

After the kids were in bed, hubby and I cozied up in front of the fire and played a game of Phase 10.  We didn’t even stay awake until midnight.  We were in bed by 11 which is late for me!

Back to the nachos.  I cheated and used tater tots for this because I wanted something easy but I have also make this by slicing up some potatoes and roasting those first.  This time I also used Lightlife burger crumbles but we have used seasoned black beans before too.

Add this to your dinner rotation-it’s a regular in this house!

Vegan Tater Tot Nachos

Total Time: 30 minutes

Yield: Serves 4-6 as main dish


  • 1 package tater tots
  • 1 package Lightlife burger crumbles
  • 1/2 cup raw cashews (soaked in hot water for a few minutes)
  • 2 Tbs to 1/4 cup water
  • juice of half a lemon
  • miscellaneous toppings: tomatoes, green onions, lettuce, cilantro, salsa etc


  1. Cook the tater tots according to package instructions.
  2. Brown the burger crumbles in a skillet.
  3. Meanwhile make the cashew cream by combining the cashews, water, lemon, and a pinch of salt in a blender. Blend until smooth-adding water as necessary for a pourable consistency.
  4. Chop your ingredients for the toppings.
  5. When the tator tots are done transfer them to a large platter. (Or individual plates if you prefer)
  6. Top with the burger, drizzle with the cashew cream, and add the remaining toppings.
