Quinoa with Mushroom Gravy and Kale
This quinoa with mushroom gravy is a warm and comforting meal for chilly days
I already had something else planned for dinner but then somewhere I saw mention of a millet bowl with mushroom gravy from Oh She Glows my dinner plans changed.
The day was a bit dreary and there was a chill in the air. It seems my body takes a little while to adjust to the cooler days and I’ve felt chilled during the day and have been craving warm and comforting meals.
This meal is definitely warm and comforting. The gravy is delicious and would be great over pasta or rice or baked potatoes.
It is vegan and ready in 30 minutes.
The kids weren’t crazy about the mushrooms but they ate the quinoa and the rest of the gravy.
