Pumpkin Chocolate Chip Muffins {Appreciation Post}

Occasionally in my posts you will see mention of hubby.  He is my recipe tester, morale booster, and all around biggest supporter.  In fact, he is the one that encouraged me to start this little hobby.

Today you get to learn a little bit more about him.

What is your significant other’s favorite blog called? “What is this a quiz? I thought this was questions about me. Mother Runner. Right? Is that your favorite?”

What is their favorite prop?“What in the world? Your favorite prop….the china I brought home for you”

What is the weirdest thing you have seen your spouse do for a blog post? “Made a table of 3 crying kids sit with me while you were taking pictures of food on the front porch in the cold. While we were waiting to eat.”  Note:  my hubby likes to exaggerate a little :)

If you could have your own blog what would you call it? “The Humble Rambles of a Genius”
What do you do for a living and what are your hobbies? “I am a food distributor. My hobbies are film and literature and woodworking and fantasy football.”

Favorite recipe on blog: That’s a tough one. There is so much on there. I like the Bang Bang Cauliflower and the lettuce wraps. Didn’t you do one that I was crazy about that you never made again?”

What kind of recipes do you wish I made more of: More dinners with a main dish and a couple of sides. You make a lot of stews, chili…Which are awesome.

I hope you enjoyed getting to know hubby a little better.  I think he is ready to make this a regular feature ;)

While the recipe I have for you today isn’t a main dish or a side, it does have chocolate which is one of hubby’s favorites.

These pumpkin chocolate chip muffins are vegan, whole wheat, and free from refined sugar (except for the chocolate chips).  The kids-and hubby-still gobbled them up

Pumpkin Chocolate Chip Muffins

Pumpkin Chocolate Chip Muffins

Total Time: 30 minutes

Yield: About 24 muffins

Ingredients

  • 2 cups white whole wheat flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 cup melted coconut oil
  • 2/3 cup maple syrup
  • 1 1/2 cups pumpkin puree
  • 2/3 cup almond, soy, or rice milk
  • 2 tsp vanilla
  • 1/2 cup hot water
  • 1 1/2 - 2 cups mini chocolate chips. I like Enjoy Life brand

Instructions

  1. Preheat oven to 350 degrees.
  2. Line muffin tin with paper liners
  3. In a medium bowl, whisk together the dry ingredients.
  4. Add the oil, maple syrup, milk, pumpkin, hot water, and vanilla to the dry ingredients.
  5. Fold in the chocolate chips
  6. Spoon batter into muffins tins.
  7. Bake 20-25 minutes, until toothpick inserted in center of muffin comes out clean.
  8. Remove to wire rack to cool.
