Weekly Menu Plan

We have had some crazy weather here in Michigan this past week.  Tuesday it was almost 100 and today it is rainy and in the 50′s.  We even have a fire in the fireplace.  The one thing missing (ok it’s really 2) is some hot cider and doughnuts.  Who wants to bring me some?

Yesterday was a beautiful fall day in the mid 60s so we went to a local park to visit the farm animals and go for a little hike.  Today I am glad I got my 10 mile run in before the rain started.  This morning’s run was quite possibly my best run ever! I am 2 weeks away from my half marathon and can not wait!

We have some more fall-ish meals on the menu plan this week:

Monday:  Farro salad

Tuesday: Pot Pie lightly based on this recipe from Cooking Light

Wednesday: Broccoli Cheese soup–not sure on the recipe for this one yet

Thursday: some kind of stir-fry

Friday:  Homemade Pizza night

Saturday:  BBQ Quinoa Salad minus the bacon

Sunday: Kale and Caramelized Onion Grilled Cheese with Tomato Soup {Cooking Light Sept. 2o13 issue}  We actually had this for lunch yesterday and it was so delicious!

  1. How exciting that you’re only two weeks out!! And I hear you on the weather- we went from using the a/c two days ago to freezing this morning!
