Weekly Menu Plan


So, I’m a little late getting this menu plan up. Yesterday I ran my half marathon.  After 5 months of training, getting up at 5:30 on Sunday mornings, miles logged on the treadmill and roads, it is done.    I am doing a guest post on Michigan Runner Girl about my experience at my half marathon so I won’t bore you with the details now.  I will just say that I made my goal by almost 2 minutes.  And I am trying to avoid all stairs today.

Here’s the menu for this week:

Monday:  I didn’t have anything planned so I pulled out a favorite.  Lentil Dal and rice.

Tuesday: Farro Risotto with Mushrooms

Wednesday:  Pumpkin Pancakes

Thursday: BBQ ‘chicken’ soy curl sandwiches

Friday: Homemade Pizza

Saturday: Jumbo Stuffed Shells {Vegan}

Sunday: Vegan White Chili

  2. congrats on your goal time for your half…I could not walk for like 2 days after i ran mine in August…goind down stairs was the worse!
