Satay Noodle Salad
It has been quiet around here this week! Not only on the blog but here at home, as well.
We have been without kids or a dog this week.
We spent the weekend at my parents’ house and then actually left the kids and the dog there for the week!
Hubby had Monday and Tuesday off. Monday, after I had a dentist appointment, we drove over to Ikea. We were looking for a chair for the computer desk but didn’t end up buying one yet because they were still a little more than we wanted to spend. We did buy a floor lamp and a cabinet for our half bath.
Tuesday we had a date day and were out for the whole day. We went out for breakfast at a hip little restaurant called The Laundry which was excellent. After breakfast we drove downtown to the Detroit Institute of Arts. After we had our fill of art culture we went for lunch at Seva, a vegetarian/vegan restaurant I have been wanting to try. It was good but not real imaginative. I feel I could make most of the menu items at home. We stopped at the mall on the way home for a little shopping and then watched the movie “Mud” at home. It was a really nice day and was great to just spend the whole day together.
The rest of the week I have been working on some things around the house. Like finally moving some of the boxes in the basement that have been there since we moved almost 2 years ago!
I had planned on spending a lot of time on the blog but it has actually been nice to take a little break from technology. Next week the blog will be kinda quiet as well since it is the last week before school starts. And the last week before I go back to work for a couple days a week.
I plan on taking advantage of every minute with my kiddos. I have missed them this week but have enjoyed some time just me and hubby. And I know the kids are Grandma and Papa have had a great week!
While this week I have made some dishes that I know the kids wouldn’t eat this meal wasn’t one of them. I actually made this satay noodle salad and the kids actually liked it. Well, they like the snap peas and the noodles but that works for me!
Hubby said he could have done without the eggplant but I happen to love eggplant!
I grilled the veggies on my Cuisinart Griddler but you could, of course, use your outdoor grill.
