Corn on the Cob with Garlic Butter and Lime
Sweet Corn on the Cob dressed up with garlic butter and lime zest
School may have started but this week it feels like summer again. The farmers’ markets and roadside stands are still bursting with fresh produce so we are still eating like it is summer. Lots of fresh tomatoes and cucumbers.
We planted a very small garden this year and we have harvested some peas, green beans, and lettuce. We have some tomatoes coming but none that are red yet. We still have some carrots growing too and there are a couple peppers to pick tomorrow.
My parents have a much larger garden and share a lot of their yield which includes lots of squash, cucumbers, and tomatoes. They have some patty pan squash which I used in a recipe last week that L loved. She even said it was better than breakfast for dinner! That recipe will be coming later in the week.
Another farmers’ market staple, especially here in the Midwest, is sweet corn. I am really not a huge fan of corn on the cob so I like to dress it up a little. An easy way to do that is with a little garlic butter and lime zest.
The leftovers are also really great in a salad with some black beans, quinoa, and tomatoes.
