Black Bean and Barley Salad with Jalapeño Lime Dressing
This black bean and barley salad is perfect for a light summer meal or a picnic
Let’s talk TV today. Do you have a favorite show this summer? I really don’t watch very many shows now that Mad Men is over. Hubby and I have been watching The Bridge but I’m not sure about that one yet. The lead character might just be a bit too quirky with no real explanation for why she is has no social skills whatsoever.
We also watched the first episode of Top Chef Masters last week.
I am a die-hard Top Chef fan but the Masters version isn’t the same without Tom and Padma. Hubby isn’t a big fan of Curtis Stone but I don’t mind watching him for an hour. I haven’t been watching the Bachelorette but I do plan on tuning in for the finale. I happened to watch the Guys Tell All episode and they got me with their preview of the “most dramatic season finale yet.” I’m a sucker.
All in all I would be perfectly happy to do away with the TV. Until Downton Abbey comes on.
This recipe has nothing to do with TV or any of the above mentioned shows. But it is delicious and you should definitely make it. Feel free to use a different grain like quinoa instead of the barley but I like the texture of the barley. I was out of limes so I used a little lime essential oil but you can sub lime juice.
The pumpkin seeds are optional but add a nice crunch that I know Padma and Tom look for in a salad.
