What I Ate Wednesday
Last night hubby and I went out to dinner with a group of friends. It was an appreciation dinner for L’s school. She goes to a small church school and I helped out with lunches once a month, field trips, etc. As appreciation the school treated everyone to dinner last night at a local Mexican restaurant. I don’t know the last time hubby and I went out to dinner without the kids! It was also the first time we left the kids with a babysitter that wasn’t one of our parents! Things went great and the kids (and parents!) had a great time. The kids are already asking when Kimmy can come babysit again!
Earlier in the week I mentioned that I was participating in the clean and lean challenge from Run to The Finish and the Whole 28 from Happy Herbivore. Because of that I thought I would share what I ate yesterday. We did go out to eat last night which, of course, isn’t the cleannest food but you can make healthy choices even when eating out.
Here’s my eats from yesterday.
Breakfast: Carrot Cake Oatmeal. This recipe will be up tomorrow! It is so good!
Lunch: Sandwich on homemade whole wheat bread with hummus (homemade), cucumbers, tomato, and lettuce
Snacks: After workout (ran 3 miles on treadmill) smoothie with unsweetened almond milk, banana, Amazing Grass Green Superfood, flaxseed, and kale. Unpictured snack of a handful of almonds and blueberries
Dinner: I didn’t take a picture of my dinner at the restaurant. I had grilled vegetable fajitas with corn tortillas (better option than flour tortillas which use white flour), beans, rice, pico de gallo, and guacamole on the side. And I resisted the chocolate cake that was served!
