Vegetarian BBQ Chicken Pizza
Every Friday night is homemade pizza night at our house. For most people, pizza probably means sauce, tons of cheese, and maybe a few veggies. I like to make it a little differently. First I use a whole wheat crust. Then add veggies and maybe a little cheese. Pizza doesn’t have to be unhealthy!
For this vegetarian BBQ ‘chicken’ pizza I used soy curls but you could also use something like Gardein.
Ingredients
- 1 whole wheat pizza crust, unbaked. Homemade or store-bought. You could use a prebaked too.
- 1/2 cup BBQ sauce. I made my own using this recipe.
- 1/4 cup soycurls, soaked in water for 10 minutes or Gardein
- 1/2 red, orange, or yellow bell pepper, chopped
- 1/2 onion, chopped (I used yellow but red would be great)
- handful of chopped kale
- 1/4 cup mozzarella cheese or Daiya mozzarella cheese. I did half with mozzarella and half with Daiya.
- mushrooms would be good but I didn't have any
Instructions
- Preheat oven to 425 degrees.
- Place your crust on a pizza stone or large baking sheet
- Spread the sauce on the crust.
- Sprinkle the veggies on top.
- Sprinkle with the cheese if desired.
- Bake about 15 minutes, until crust is golden and cheese is melted.
