Peanut Butter Chocolate Cookies
Is there really any better combination than peanut butter and chocolate? This recipe takes a classic chocolate chip cookie and raises it to the next level with extra chocolate and peanut butter.
This cookie is so moist and chewy you will never miss the eggs. With whole wheat flour, flaxseed, and cocoa powder these cookies are definitely on the healthier side as far as cookies go. Pair with with a nice cold glass of almond milk and you have an after school snack the kids (and you!) will love! The hard part will be stopping at one!
Ingredients
- 4 Tbs Earth Balance
- 1/4 cup peanut butter
- 1/2 cup sugar
- 1/2 Tbs molasses
- 1 tsp vanilla
- 1 Tbs flax meal mixed with 3 Tbs water
- 1 cup flour
- 1 tsp baking soda
- pinch of salt
- 2 Tbs unsweetened cocoa powder
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 350 degrees
- In bowl of stand mixer, cream together the Earth Balance and the peanut butter.
- Add the sugar, molasses, vanilla, and flax seed mixture.
- Add in the flour, salt, baking soda and cocoa powder. Mix until combined. Add another 1-3 Tbs of water if batter is too dry. (It should stick together but not be too wet.)
- Stir in the chocolate chips.
- Scoop heaping Tablespoons of dough (I used a small cookie scoop). Form into a ball then place on baking sheet.
- Flatten slightly with heel of your hand.
- Bake for about 10-12 minutes. Outside edges should be set but middle will still be soft and a bit mushy.
- Let cool slightly.
