Peanut Butter Banana and Flax Oatmeal
If you have been reading this blog for awhile and have read any of my what I ate Wednesday posts you know that I eat oatmeal for breakfast almost every single morning. I’m a creature of habit and love how quick and easy oats are. Plus they keep me full until lunch.
Oats are a great source of fiber and including oats in your diet has been shown to decrease your cholesterol. I like to add in some peanut butter for protein, banana for sweetness and a fruit serving, and flax for the omega-3′s’. I often toss a handful of homemade granola on top for crunch. In the bowl of oatmeal that is pictured the topping was some cherry berry granola from my Nature Box.
This is a super simple and healthy breakfast that is ready in under 2 minutes. No excuses for not eating a nutritious breakfast!
Ingredients
- 1/2 cup oats, I like old fashioned rolled
- 3/4 cup water
- 1 banana
- 1 Tbs natural, no oil added, peanut butter
- 1 Tbs ground flaxseed (or chia seed)
- handful of granola, optional
- splash of almond or soy milk
Instructions
- Place the oats in a microwave safe bowl. Use a deep bowl so it doesn't boil over in the microwave.
- Add the water.
- Slice the banana into the bowl. Stir.
- Place in microwave for 1 1/2 minutes
- Remove from microwave.
- Add the peanut butter, flax, and granola. Add a little of the milk if desired for a creamier consistency.
- Stir and eat!
