Weekly Menu Plan Week of Feb 10, 2013
Back to the grind again! We had a snow day on Friday which was so nice! The weekend is definitely too short. Are you starting to get the itch for Spring? I know I am!
This weekend we drove down to my parents’ which is about 2 hours away. During the car ride down, G started to complain of her ear hurting. She really looked like she didn’t feel good and by the time we got to mom and dad’s she was really crying about her ear. My parent’s live out in the country and there were no walk in clinics open in the town closest to them so we took her to the ER. An hour later she got a dose of antibiotics and ibuprofen and was acting like her old self and we all were still able to enjoy the weekend.
Here’s the menu plan for this week:
Monday: Soup. I’m thinking roasted cauliflower soup or curried cauliflower and sweet potato soup
Tuesday: Cumin Spiced Chickpeas and Carrots
Wednesday: Quinoa Pancakes; A savory version and a sweet version
Thursday: Valentine’s Day! I’m thinking heart shaped ravioli with tomato sauce and chocolate chia pudding with raspberries for dessert
Friday: Homemade Pizza Night
Saturday: Having dinner guests and I’m not sure what I’m making yet!
Sunday: Spicy Autumn Vegetable Burger

I really need to give chia seed pudding a try. I love chia seeds, so I don’t know why I haven’t made pudding with them yet!
It’s so good! I haven’t made it in awhile so I am looking forward to having it again
