Vegetarian Chicken Tortilla Pie
We had more than enough food for the Super Bowl. So much that we are still eating leftovers! One of the leftovers we had lots of was black bean dip.
I was looking through some of my cookbooks for some menu plan inspiration and stumbled upon a recipe for chicken tortilla pie. It uses black bean dip so I thought it would be the perfect way to utilize some of our leftovers.
I made homemade tortillas but to make it even easier you could use a whole wheat store bought variety.
Ingredients
- 4 8 inch whole wheat tortillas
- 1 1 /2 cups Soy Curls
soaked in hot water for about 10 minutes
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 cup black bean dip
- 1/4 cup shredded cheese (optional)
- 1 bell pepper, chopped
- 1/2 onion, chopped
- 1 tomato, chopped
- handful fresh cilantro, chopped
Instructions
- Preheat oven to 375 degrees.
- Preheat a medium skillet over medium heat.
- Add the soycurls, cumin, chili powder, garlic powder, and salt.
- Cook about 10 minutes, until soy curls start to brown a little.
- Spread 1/4 cup black bean dip on one side of each tortilla
- Place one tortilla, bean dip side up, in a springform pan or 8 x 8 baking dish.
- Top with about 1/4 cup bean dip.
- Continue to stack the tortillas with bean dip and soy curls.
- Sprinkle cheese over the top layer.
- Bake 10-15 minutes, until cheese is melted and layers are heated through.
- Mix together the bell pepper, onion, tomato, and cilantro in a small bowl. Place on top of tortillas after removing from the oven.

oh goodness, this sounds fabulous! i see so many possibilities with this dish! yum!!
i’ve never heard of soy curis….thos sound so interesting to use..and this dish looks really good!
Will have to hunt down soy curls, haven’t heard of these before.
