Vegan Slow Cooker White Chili| Thrifty Veggie Mama

Winter just isn’t giving up easily here.  We have another snow day today after a few more inches of snow last night.  It really looks like a beautiful winter wonderland.  Hopefully this is winter’s last hurrah before spring starts to make an appearance!

I know a lot of the country got hit with some snow in the past few days.  On days like this I love to put chili or soup in the slow cooker and have a nice warm meal simmering all day.  Then you can take the kids outside and play in the snow and have dinner all ready when you come in!

White chili is a nice change from the typical chili.  In this version I used Worthington FriChik but you could also use Gardein or even omit it all together.

Vegan White Chili in Slow Cooker| Thrifty Veggie Mama

Vegan Slow Cooker White Chili

Prep Time: 5 minutes

Total Time: 2 hours

Yield: Serves 10-12

Ingredients

  • 8 cups cooked white beans or 4 15 oz cans
  • 4 cups water
  • 1 can diced green chiles
  • 1 tsp coriander
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1 Tbs nutritional yeast
  • 2 tsp chili powder
  • 1 12.5 ounce can Worthington Fri Chik drained and chopped. (Substitute Gardein or omit)
  • 1 8 ounce containter Tofutti Better than Sour Cream

Instructions

  1. Place all the ingredients except the sour cream in the slow cooker.
  2. Mix well and cook on low for 6-8 hours or high for 2-4 hours.
  3. Add in the sour cream just before serving.

    • If you are using canned beans, yes drain and rinse first.
