Roasted Cauliflower Soup with Fried Capers
Do you watch Amazing Race? In the latest episode they were in Bora Bora. Now I dream about myself in a beach chair in Bora Bora. Warm sandy beaches. Crystal clear blue waters. Fresh, warm breezes. The sun warming the skin of my flat, toned stomach. Hey, when I dream I dream big!
Unfortunately there is no Bora Bora in my future. And after 3 kids a flat, toned stomach probably isn’t in my future either. Instead I must be content with occasional sunny days and more snow showers. Warm coats and hats and mittens. Brown grass. Runny noses. Fresh, frigid winds.
And bowls of warm, creamy cauliflower soup.
Ingredients
- 1 head of cauliflower, cut into small sections.
- olive oil
- salt
- pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 1/4 cup capers, drained
- 1/4 cup organic canola oil
Instructions
- Preheat oven to 425 degrees.
- Place cauliflower on baking sheet and drizzle with a little olive oil. Sprinkle with salt and pepper.
- Roast for about 30 minutes, until cauliflower is tender. Remove from oven and set aside.
- Preheat a medium soup pot over medium heat.
- Add the onion and garlic and a small drizzle of olive oil.
- Saute until onion is softened and garlic is fragrant. Stir frequently so the garlic doesn't burn.
- Add the vegetable stock. Add the cauliflower to the pot and use an immersion blender to blend until smooth or place everything in a blender and blend until smooth.
- Season with salt and pepper.
- Place canola oil in a small pan. Preheat oil and pan over medium heat. You want the oil to be hot.
- Add the capers and cook for 1-2 minutes, until crispy.
- Remove with slotted spoon and place on paper towel lined plate.
- Serve soup with the capers on top.

I love cauliflower and just don’t use it nearly enough. What a great recipe! Could use some on a cold day like today.
my future sounds about the same as yours…so saying that i think this soup would be the perfect pick me up….i’ve never fried capers before i am likin the sound of that…stay warm!
