Penne with Butternut Squash Sauce
We have a lot of cold, gray days here in Michigan in the winter. Days when you would rather not have to go outside. Days when all you really want to do is curl up in front of the fire with a good book. A good book without pictures.
Days when you need something warm and cozy to fill your belly after a long day. And what is more comforting than baked pasta?! Baked pasta with a silky smooth butternut sauce.
The hardest part of this recipe is peeling, cutting, and roasting the squash. Do that ahead of time and you can have a warm meal in no time. Which leaves you with more time to curl up on the couch with a good book.
Ingredients
- 3 cups peeled and cubed butternut squash (you could also roast the squash before peeling and cubing)
- 1 Tbs olive oil
- 1 12 ounce box penne pasta
- 2 Tbs non-dairy spread like Earth Balance
- 2 Tbs flour
- 2 cups unsweetened plain almond milk or soy milk
- pinch of nutmeg
- 1 tsp sage
- salt and pepper to taste
- 1/2 cup breadcrumbs
Instructions
- Preheat oven to 400 degrees.
- Spread butternut squash on baking sheet. Drizzle with olive oil.
- Roast in oven until tender, about 45 minutes.
- Place squash in blender or food processor and blend until smooth.
- Bring a large pot of water to boil. Add penne and cook until tender but with a little bite. Drain and return to pot.
- Melt butter in medium skillet. Whisk in the flour and cook for a minute.
- Whisk in the almond or soy milk.
- Add in butternut puree and the seasonings.
- Pour sauce over pasta in the pot. Stir to coat. Place in 2 qt baking dish. Top with breadcrumbs.
- Bake about 10-15 minutes, until breadcrumbs start to brown.

Pasta is truly my comfort food too, especially baked pasta. This sauce sounds amazing, and something I need to try to recreate. I don’t eat butternut squash as much as I’d like.
