Basic Granola
Granola is a staple in our house. Hubby eats it almost every morning. Granola is actually really simple to make at home and costs way less than the little bags of the store bought stuff. The store bought stuff usually has way too much sugar for my tastes as well.
This is a basic granola recipe that you can adjust depending on what you have on hand. Sometimes I use almonds, sometimes I use walnuts. I’ve use honey, brown sugar, maple syrup, and molasses as sweeteners (not at one time!) The granola in these photos was made using half molasses and half brown sugar hence the darker color.
Eat it in a bowl with some almond milk or berries. Use as a topping for yogurt. Or eat it plain as a snack!
I make a batch of granola every week without fail. Be warned. If you make it once they will be begging you to make it a staple in your house as well!
Ingredients
- 4 cups old-fashioned rolled oats
- 1 1/2 cups nuts of your choice
- 1 teaspoon sea salt
- 1/2 teaspoon cinnamon
- 1/2 cup olive oil
- 1/4 cup sweetener (note: I tend to not make my granola as sweet because hubby likes to add honey to each individual bowl)
- 3/4 teaspoon vanilla
- 1/2 cup coconut flakes (optional, sometimes I don't have these on hand)
Instructions
- Preheat oven to 325 degrees.
- Mix all the ingredients, except the coconut if using, together in a bowl.
- Spread on baking sheet.
- Bake for 10 minutes. Remove from oven. Stir and add coconut and bake for another 10 minutes.
- Remove from oven and let cool. Store in airtight container for 1-2 weeks. But it won't be around that long.
