Oatmeal Apple Pie Bars {Secret Recipe Club}
Well, we took the month of December off from Secret Recipe Club but we are back this month!
My assigned blog this month was Yumsilicious Bakes. Avanika shares many delicious baking recipes on her blog that will definitely tempt you. I chose Oatmeal Apple Pie Bars to make for my recipe this month. I love apple crisp and loved the idea of it in a bar form. These bars are really simple to make and the kids gobbled them up.
I made a few changes to make them a bit healthier. I omitted the sugar in the filling and used applesauce instead of the butter in the crust. Next time I would use 1 or 2 Tbs butter in the crust instead of subbing in the applesauce for all of the butter
Ingredients
- +Filling +
- 3 large apples, cored and sliced
- 1 tbsp unsalted butter
- 1 tbsp ginger
- 2 tsp cinnamon
- pinch of salt
- +Crust+
- 1 cup whole wheat flour
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/3 cup packed dark brown sugar
- 1 cup old fashioned oats
- 1/2 cup applesauce
Instructions
- Preheat oven to 350 degrees.
- Line a 9 inch baking pan with parchment.
- Make the filling : Melt butter in a large saucepan. Add all remaining filling ingredients and cook, stirring often and apples begin to soften. I left mine a little crispy still.
- Whisk together the flour, baking soda, salt, brown sugar and oats.
- Add the applesauce and mix well. Take 1 1/2 cups of the crust and press into bottom of prepared baking dish.
- Spoon the filling over the crust.
- Sprinkle on the remaining crust mixture.
- Bake for 30 - 35 minutes, until the topping is light golden brown.
