Coconut Flour Chocolate Chip Cookies

These came about out of necessity.  The necessity for chocolate chip cookies combined with the realization that you’re out of flour.  And then the discovery of the coconut flour you forgot you bought.

These cookies turned out way better than I hoped.  Soft and chewy, just the way I like them.  The kids gobbled them up but they haven’t met a chocolate chip cookie they didn’t like.  Hubby, the true critic, also gave them his seal of approval.

Coconut Flour Chocolate Chip Cookies

Yield: about 20 cookies

Ingredients

  • 2/3 cup coconut flour
  • 1/3 cup potato starch (I think cornstarch would work here too)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/3 cup cane sugar
  • 1 tsp vanilla extract
  • 2 Tbs ground flaxseed mixed with 4 Tbs water
  • 1/3 cup chocolate chips (dairy free like Enjoy Life brand for vegan)
  • 4 Tbs applesauce
  • 4 Tbs Earth Balance
  • 3-4 Tbs water

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all dry ingredients in a medium bowl.
  3. Next add in your vanilla, flax/water mixture, applesauce, and butter.
  4. Let sit for about 10 minutes.
  5. Add in the chocolate chips.
  6. Add in the water a little at a time until the batter combines and starts to hold together. It will be thick.
  7. Place by the rounded tablespoon on baking sheet.
  8. Press down the cookies with the heel of your hand.
  9. Bake about 15 minutes, until the edges start to brown but the center is still a bit squishy.
