Weekly Menu Plan Week of Dec 30, 2012

I know I said you wouldn’t hear from me again until after the New Year.  But I just couldn’t wait that long!  I’m starting 2013 off right with a healthy menu plan for you.  My diet has definitely not been as healthy as I would like the past couple weeks so I am going to clean it up a bit.  For the month of January I am going to cut out all dairy (which I have been doing pretty much anyway) and cut out all refined sugar.  This will be the hard one for me.  I definitely love sugar.

But here’s the menu plan for the week.  I didn’t include lunches and breakfasts here this week but I plan on doing this in the future.  To be honest I just wasn’t quite that organized this week and L is still home from school.

 

Sunday:  Tonight I made Liz’s Quinoa Hummus Cakes and they were delicious!  Everyone loved them.  Definitely making these again.

Monday:  As it is New Years Eve we are having some snacky foods for dinner.  I am making Vegveeta Dip for nachos, spinach artichoke dip (made this for Christmas and everyone loved it!), and mozzarella sticks for the kiddos.  I think we will have lettuce wraps (with tofu) as well.

Tuesday: Sweet Potato Black Bean Burgers

Wednesday:  Lentil Soup

Thursday: Butternut Squash Barley Risotto (based on this recipe)

Friday:  Homemade Pizza Night

Saturday: Pasta of some sort

  3. Yum, I’m coming to your place for NYE! I love that art-spin dip, too – made several batches over the holidays. I’m sharing Liz’s hummus recipe tomorrow… might want to add that to your NYE lineup, too ;)

  4. Ugh! My weekly menu is done but I couldn’t decide what I wanted to plan for NYE! Back to the grocery store!

    • I hate that! I actually forgot a couple things so might have to make a trip back to the store

  5. I LOVE that you got back to menu planning now. I have GOT to get back on track too. I had a Quinoa cake at a restaurant recently and am so anxious to try this version. Happy New Year Jamie!!!

    Our tradition has always been steaks on the grill for New Years, my daughter has replaced me in that tradition w my husband ;) I’m going to make something snacky, just still not sure yet!
