Roasted Butternut Squash and Sage Pesto Crostini

Today is a special day!  Today we are celebrating Rachel from Rachel Cooks.  Rachel is expecting baby #2, a boy, in December and today you are all invited to her virtual baby shower.

Rachel is one of the first bloggers I contacted when I began my blog 2 years ago.  I later discovered that we both lived in metro Detroit and we were both physical therapists!  Since then I actually had the pleasure of meeting Rachel in real life at Taste of Michigan last month.  She is very sweet and always willing to answer my blogging questions.   I am amazed at how much she is able to get done with a 2 year old at home and suffering from ‘morning’ sickness even at this stage of her pregnancy.

I brought an appetizer to Rachel’s party.  I topped toasted baquette with roasted butternut squash and a sage pesto.  I love the flavor combo of butternut squash and sage.  This appetizer is really simple to put together and would also be a great appetizer for Thanksgiving.

Roasted Butternut Squash and Sage Pesto Crostini

Ingredients

  • 1 baguette
  • 1 medium butternut squash
  • 1/4 to 1/3 cup olive oil
  • 1 1/2 cups fresh baby spinach
  • 1/2 cup sage leaves
  • 1/4 cup almonds or walnuts
  • juice of 1/2 lemon
  • 1 clove garlic
  • salt and black pepper

Instructions

  1. Preheat oven to 425 degrees
  2. Slice baguette. Place on baking sheet and bake for about 10 minutes, until golden brown.
  3. Slice squash in half lengthwise and scoop out the seeds. Brush cut sides with a little olive oil. Place cut side down on baking sheet. Bake 30-45 minutes, until skin can be pierced with a fork.
  4. Remove from oven and let cool.
  5. Place the remaining ingredients in food processor or blender and blend until mostly smooth.
  6. Once squash has cooled some, remove the skin and dice the squash flesh.
  7. Spread a thin layer of pesto on the baquette slices. Top with 3-4 cubes of the squash. Top with almonds or walnuts.

    I have sage in my garden and it is so underused; this I absolutely have to try!
