Maple Glazed Sweet Potatoes

Can you believe that Thanksgiving is next week?!  It always seems like once Thanksgiving comes, Christmas is here in a blink.  I better get on the Christmas shopping!

This week I am sharing recipes that are healthier versions of Thanksgiving classics.  Is sweet potato casserole a favorite on your  Thanksgiving table?  Thanksgiving sweet potatoes usually includes lots of butter and sugar.  This version still has plenty of sweetness but uses healthier maple syrup instead.

Maple Glazed Sweet Potatoes

Yield: Serves 8

Ingredients

  • 3/4 cup maple syrup
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 Tbs olive oil
  • 1 tsp salt
  • 2 tsp cinnamon
  • 3 lb sweet potatoes, peeled and cut bite size chunks
  • 2 Tbs roasted sunflower seeds

Instructions

  1. Preheat oven to 425 degrees.
  2. Combine the maple syrup, vinegar, water, oil, salt, and cinnamon in a medium bowl.
  3. Add the sweet potatoes and toss to coat.
  4. Pour into 13 x 9 baking dish.
  5. Cover dish with foil and bake for 10 minutes.
  6. Uncover and back for 30-35 minutes or until potatoes are tender and beginning to brown, stirring occasionally.
  7. Remove from the oven and season with salt and pepper. Stir in the sunflower seeds.
