Maple Glazed Sweet Potatoes
Can you believe that Thanksgiving is next week?! It always seems like once Thanksgiving comes, Christmas is here in a blink. I better get on the Christmas shopping!
This week I am sharing recipes that are healthier versions of Thanksgiving classics. Is sweet potato casserole a favorite on your Thanksgiving table? Thanksgiving sweet potatoes usually includes lots of butter and sugar. This version still has plenty of sweetness but uses healthier maple syrup instead.
Ingredients
- 3/4 cup maple syrup
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1 Tbs olive oil
- 1 tsp salt
- 2 tsp cinnamon
- 3 lb sweet potatoes, peeled and cut bite size chunks
- 2 Tbs roasted sunflower seeds
Instructions
- Preheat oven to 425 degrees.
- Combine the maple syrup, vinegar, water, oil, salt, and cinnamon in a medium bowl.
- Add the sweet potatoes and toss to coat.
- Pour into 13 x 9 baking dish.
- Cover dish with foil and bake for 10 minutes.
- Uncover and back for 30-35 minutes or until potatoes are tender and beginning to brown, stirring occasionally.
- Remove from the oven and season with salt and pepper. Stir in the sunflower seeds.
