What I Ate Wednesday

This week has been flying by!  I was without the internet for about a day and a half.  Thankfully we got it back on just before I started to get the withdrawal shakes.

Yesterday was an exciting day.  UPS brought me a special package, well 2 packages.  My new Blendtec blender  and Twister jar.  A few weeks ago one of my favorite blogs, Two Peas and Their Pod had a Blendtec giveaway.  And I won!!!  I was shocked when I received their email stating I was the winner.  I have wanted a high-powered blender for awhile.  A Magic Bullet is great but just doesn’t cut it in this household!

 

Yesterday was a pretty busy day so I haven’t even used the blender yet but I have some plans for some serious blending in the next few days!

But on to what I did eat yesterday.

Breakfast:  The usual oatmeal with banana, PB, flaxseed, and almond milk.

Lunch:  A salad with a roasted veggie mix with potatoes, mushrooms, zucchini, and red kidney beans.

Snack 1: Fudgy brownie from Happy Herbivore cookbook

Dinner:  Hubby wasn’t home for dinner so I made the kiddos pancakes.  I had a Choplet sandwich on a whole wheat English muffin with tomato, mixed greens, a little Trader Joes non dairy mayo, and mustard.

Snack 2: Instant Cookie Dough another recipe from Happy Herbivore cookbook.  Essentially mix oats, cocoa powder, PB, and maple syrup together.

 

This month Jenn is having a Halloween/Fall snack theme on What I Ate Wednesday.  I wasn’t very fall themed this week.  But pumpkin finally made its way onto my grocery list.

  1. Yay for a new blender!! Sometimes it’s nice when daddy’s not home and you don’t feel like cooking. Pancakes for breakfast sounds like a fun treat for them. :)
