Peanut Butter Chocolate Chip Muffins
So, I was just writing this post. Had it mostly written. And it disappeared. So now I am rewriting it. Except it was way more brilliant and funny the first time. Trust me
Is there anything that goes together better than peanut butter and chocolate? It is truly a classic combination. Just ask Reeses. Here I added some whole grains. Left out the oil and refined sugar and left you with a muffin that is perfect with coffee and tea for breakfast. Or just right for an after school snack. Or both and anytime in between.
G helped me mix up the batter. She also did a great job cleaning out the bowl. One of the perks of vegan baking is worry free batter licking.
Ingredients
- 1 1/4 cup white whole wheat flour
- 1/2 tsp salt
- 1 Tbs baking powder
- 1/3 cup rolled oats
- 1/4 cup soymilk
- 1 tsp chia seeds
- 1 mashed banana
- 1/2 cup maple syrup
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- 4 Tbs peanut butter
- 1/2 cup dark chocolate chips
Instructions
- Preheat oven to 350 degrees. Spray muffin pan with cooking spray.
- Mix the chia seeds and the soymilk together in a small bowl. Set aside.
- Combine the flour, salt, baking powder, and oats in a large bowl.
- Add the soymilk and chia seed mixture as well as the maple syrup, vinegar, and vanilla.
- Fold in the peanut butter and mashed banana.
- Fold in the chocolate chips.
- Spoon the batter into muffin tin.
- Bake about 18 minutes.
