Peanut Butter Chocolate Chip Muffins

So, I was just writing this post.  Had it mostly written.  And it disappeared.  So now I am rewriting it.  Except it was way more brilliant and funny the first time.  Trust me :)

Is there anything that goes together better than peanut butter and chocolate?  It is truly a classic combination.  Just ask Reeses.  Here I added some whole grains.  Left out the oil and refined sugar and left you with a muffin that is perfect with coffee and tea for breakfast.  Or just right for an after school snack.  Or both and anytime in between.

G helped me mix up the batter.  She also did a great job cleaning out the bowl.  One of the perks of vegan baking is worry free batter licking.

Peanut Butter Chocolate Chip Muffins

Ingredients

  • 1 1/4 cup white whole wheat flour
  • 1/2 tsp salt
  • 1 Tbs baking powder
  • 1/3 cup rolled oats
  • 1/4 cup soymilk
  • 1 tsp chia seeds
  • 1 mashed banana
  • 1/2 cup maple syrup
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 4 Tbs peanut butter
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Spray muffin pan with cooking spray.
  2. Mix the chia seeds and the soymilk together in a small bowl. Set aside.
  3. Combine the flour, salt, baking powder, and oats in a large bowl.
  4. Add the soymilk and chia seed mixture as well as the maple syrup, vinegar, and vanilla.
  5. Fold in the peanut butter and mashed banana.
  6. Fold in the chocolate chips.
  7. Spoon the batter into muffin tin.
  8. Bake about 18 minutes.
