Zucchini Bake with Quinoa Crust

When I started making this meal I had only a vague idea of what I wanted to make.  I knew I wanted to use zucchini.  And I wanted to make a one dish meal.  So I needed to add some protein somehow.  Ok, let’s add some quinoa.  But instead of mixing it all together I thought a quinoa crust would be nice.   Add a crunchy breadcrumb topping and you have a perfect one dish meal.

If you wanted even more protein white beans would go well in this dish.

Zucchini Bake with Quinoa Crust

Ingredients

  • 1 cup quinoa, uncooked
  • 1 1/4 cup water
  • 2 T ground flaxseed mixed with 4 Tbs water
  • 1 T flour
  • 1 large zucchini, sliced
  • 1 onion sliced
  • 1-2 cloves garlic, minced
  • 2 slices of bread
  • 2 Tbs feta (optional)
  • 2 tsp olive oil
  • salt and pepper

Instructions

  1. Preheat oven to 375 degrees
  2. Place the quinoa and water in a medium skillet. Bring to boil. Reduce heat and simmer about 15 minutes, until quinoa is cooked.
  3. Add the flaxseed/water mixture and the flour to the quinoa. Mix well.
  4. Press the quinoa mixture firmly into the bottom of a 2 qt baking dish.
  5. While the quinoa is cooking place the onions,garlic, and zucchini in a preheated medium skillet.
  6. Cook until zucchini is almost tender. Salt and pepper to taste.
  7. Place the slices of bread in a food processor and pulse until crumbly, like breadcrumbs. Crumble in the feta and add the olive oil.
  8. Place the zucchini mixture on top of the quinoa crust. Sprinkle the breadcrumb mixture over the top.
  9. Bake for 20-30 minutes, until topping begins to brown.
