Menu Plan Monday

This is our last week of “summer.”  My oldest baby starts Kindergarten on Monday.  I’m not ready.  She is ready.  But I am so not ready.  This week I will be finishing up school supply shopping.  Our school has uniforms so I already have the clothes shopping mostly done!  I am also going to come up with ideas for fun school lunches.  Peanut butter and jelly will only last so long.

I am especially loving cooking these past few weeks with all of the summer produce around.  Roast some veggies, add some pasta and red sauce and you have a meal!  (More on that later in the week)

I admit I have abandoned my meal plan frequently over the past couple weeks because I get other ideas.  But here’s what is scheduled for this week.  We’ll see how many of these meals actually get made!

Monday:  Falafel (If you like falafel try falafel stuffed eggplant!)

Tuesday:  French Toast

Wednesday:  Walnut Crusted Tofu

Thursday:  Leftover night

Friday:  Homemade pizza night

Saturday and Sunday:  We have a lot going on this weekend.  A picnic on Saturday (which I have to take a dish to pass but not sure what that will be yet)

Baby shower on Sunday and not sure what dinner will be yet.

  1. Oh my Momma heart strings are pulling for you! I know it’s hard to send your baby to kindergarten…. BUT, it’ll be a great day with lots of fun. Enjoy this season!!!! Can’t wait to hear how it went….

    I too totally quit menu planning…. but got back to it this weekend and am actually prepared this week with a plan and groceries. Feels SO good!!!

  2. My oldest started Kindergarten today and I was the one heartbroken without a hug as she ran off to join her new classmates. I love the menu plans. Our family will definitely be cribbing!
