Cherry Strudel and Apple Strudel
These pockets for deliciousness are way easier than they look. They are also very versatile as you could use any fruit filling you wanted. And they freeze really well and work great for a quick breakfast or snack. Are you convinced that you need to make them yet? Flaky pastry filled with sweet fruit. Think toaster strudel only way better.
I had a big package of cherries in my fridge so I make a quick filling with those and then used applesauce to make the apple variety.
Frozen puff pastry sheets makes this super easy to make. And might win you a nomination for mom and wife of the year.
Ingredients
- 3 sheets of frozen puff pastry, thawed
- 1 1/2 pounds cherries, pitted and stemmed, and roughly chopped
- 1/4 cup water (or as needed to get desired thickness)
- 1 Tbs cornstarch
- 1-2 Tbs honey or maple syrup
- 1 tsp vanilla
- 2 cup unsweetened applesauce
- 1/4 cup brown sugar
- 2 tsp cinnamon
- Cooking spray
- Powdered sugar
Instructions
- Preheat oven to 375 degrees.
- Begin by placing the cherries, cornstarch, water, sweetener, and vanilla in a small saucepan.
- Heat to a boil, reduce heat and simmer until thickened.
- For the apple filling mix together the applesauce, brown sugar, and cinnamon.
- Lightly flour your work surface. Take one of your sheets of puff pastry and roll it into a thinner rectangle.
- Cut each rectangle into 6 equal smaller rectangles.
- Place about 1/4 cup filling in the center of each rectangle. Fold pastry over to cover the filling. Press the edges together well with a fork.
- Place on baking sheet that has been coated with cooking spray.
- Spray the top of the strudel with the cooking spray.
- Bake for 30-35 minutes until tops are golden brown.
- Sprinkle with powdered sugar if desired.
