What I Ate Wednesday

Yippee! It’s Wednesday again. This week seems to be flying by. It has only been in the 80′s here which feels so cool after the sweltering 100+ degree weather we had the past couple of weeks. Last week I stuck to running on the treadmill because even at 6:30 in the morning the temperature had already climbed into the 80′s. This morning I dragged myself out of bed at 6:15 and went on a great 4 mile run. The air was cool, the scenery beautiful, and my mind was blissfully quiet.

Now onto my meals and snacks from yesterday.

Breakfast was Nature’s Path Pumpkin Flax Granola with almond milk and berries.

Morning snack was so delicious!  1/4 cup oats with 3/4 cups almond milk with 1 1/2 Tbs chia seeds.  Let sit for about 15 minutes until thickened a  little.  I added a spoonful of peanut butter, some coconut, sliced banana, and a few chocolate chips.  So good!

Lunch was leftover green vegetable gratin

Afternoon snack was a rice cake with peanut butter and banana which I forgot to take a picture of

Dinner was breakfast for dinner.  Apple Skillet pancake.  I used white whole wheat flour, less butter and sugar, and used flax eggs instead of the eggs.  We had this with fruit and vegan oatmeal sausage patties.

For an evening treat I also had a microwave smores.

This month Jenn’s theme for WIAW is fitness.   I am training for a half marathon so here’s my training routine right now.  I run on Tues, Thurs, Sunday with Sunday being my long run.  On Monday’s I try and do some yoga.  Wednesday and Friday I do strength training usually in the form of a torturous Jillian Michaels DVD.  (This week I am running on Wednesday and Friday in case you are asking why I ran today)

  2. Wow- your five your old took those? She definitely has talent! Your food always sounds so good. I love your morning snack- it combines all of my favorite ingredients!

  3. Can you come and cook for me? This is way healthier than I eat!!
