Pad See Ew {Secret Recipe Club}
Time for another Secret Recipe Club reveal! This month I was assigned Jess’ fantastic blog The Inquiring Chef. Jess has been living in Thailand since 2010. I’ve mentioned before my love for Thai food so I was really excited to try some of the Thai dishes on Jess’ site. Even if you don’t like Thai food (crazy!) Jess has a ton of other great looking recipes with really beautiful pictures.
But I love Thai food so I chose to make pad see ew for my dish this month. Hubby and I have a in house date night once a month. We try and get the kids to bed a little earlier. Then hubby and I eat dinner alone and watch a movie, play a game, etc. We made this dish together for our date night dinner.
It was a really easy dish to make and tasted fantastic. The only changes I made to the original dish was using the thin rice noodles because I couldn’t find the wide ones and the addition of tofu. I am sure this dish would actually be made with Thai basil but they didn’t have that at any of my local grocery stores.
Ingredients
- 1 package tofu, drained and cubed.
- 2 Tbsp. olive oil, divided
- 2 cloves garlic, minced
- 2 shallots, thinly sliced
- 5 ounces dry rice noodles (about 1/2 the box of the Thai Kitchen variety)
- 2 tsp sugar
- 2 Tbs soy sauce
- 20 leaves fresh basil
Instructions
- Prepare the noodles according to package directions.
- Heat a medium skillet over medium heat.
- Add 1 Tbs olive oil.
- Add the tofu and cook until browned.
- Heat a large skillet or wok over medium high heat.
- Add the remaining 1 Tbs olive oil.
- Add the garlic and shallots. Cook 1-2 minutes until garlic is fragrant.
- Add the noodles and toss around a bit.
- Add the sugar and soy sauce, stirring well to coat the noodles.
- Add the tofu and toss gently.
- Add the basil and cook until basil is wilted.
- Serve immediately adding chile garlic sauce for heat as needed.
