Bang Bang Cauliflower
Yesterday I let the ugly worry monster rear his head and disrupt what should have been a joyful and peaceful Sunday. I had a dentist appointment today. Little Man had to come to the dentist with me so I began to worry that he wouldn’t be happy sitting in his stroller that long and would throw a fit. I was overdue for my dental check up and only really floss after I’ve eaten some sweet corn so I envisioned receiving a stern reprimand. And I had recently noticed some dark areas on one of my teeth so I was sure I had an enormous cavern of decay from eating too much of this.
I will admit that I let all of these thoughts occupy way too much real estate in my head yesterday and this morning. When will I learn. Not one of the scenarios I had played out in my head came to fruition. Little Man melted the hearts of everyone in the office. He batted his baby blues and flashed his toothy grin and had them all eating out of his hand. Ok, he was really the only one eating (Cheerios are a great distraction tool).
I was reprimanded only slightly about my prolonged absence and the dark spot on my tooth? Merely a stain (note, brush better after drinking tea.)
Lesson learned for today? Don’t waste your time worrying!!!

If you really want something to do, make this cauliflower. The first time I made this I used Michelle’s recipe. It was fantastic but I wasn’t crazy about the use of eggs or the frying. So I adjusted the recipe a bit by eliminating the egg and baking instead of frying. It is still mind blowingly awesome. This is a great way to sneak in some extra veggies to your unsuspecting family.
Ingredients
- 1 head cauliflower, cut into florets
- 1/2 cup panko bread crumbs
- 2 Tbs cornstarch
- 1/2 cup almond or soymilk, unsweetened plain
- 1/4 cup mayo (I used Trader Joes reduced fat mayo, it's vegan)
- 1/4 cup Franks Red Hot Sweet Chili Sauce or Sriacha, depending on how hot you want it
- 1 Tbs rice vinegar
- 1 Tbs sugar
Instructions
- Preheat oven to 375 degrees
- Place a metal cooling rack on top of a large baking sheet.
- Place the cornstarch, milk, and breadcrumbs each seperately in shallow bowls.
- Dip the cauliflower florets in the cornstarch, followed by the milk, and then the bread crumbs.
- Place the florets on the cooling rack. Place the rack and baking sheet in the oven and bake for about 30 minutes, until the cauliflower is golden brown and tender.
- While the cauliflower is baking, mix together the ingredients for the sauce in a medium bowl.
- When the cauliflower is done remove it from the oven and place in the bowl with the sauce.
- Toss gently until coated with the sauce.

I worry all the time about useless things- scenarios going wrong, not having enough time for things, our baby who has yet to make her debut; so annoying! Bang bang cauliflower sounds like a great way to get people to eat their veggies!
