Spinach and Mushroom Wrap

How have you all been?  We have all been good here.  We now have a one year old and a three year old.  The birthday party went well.  G Man loved his cake as evidenced by the photos below.

He was so covered with cake that he went straight in the bath.  I even suited up in an apron before I took him out of his highchair but he still managed to get me!

My 3 kiddos definitely keep me busy so when it’s lunch time I need something that is quick or I will end up eating goldfish and fruit snacks.   I recently came up with this quick wrap and it is now one of my favorites.  Few ingredients are required and it takes mere minutes to whip up.  Quicker than macaroni and cheese or peanut butter and jelly.  Ok, it might not be quicker than PB&J but it is quicker than a 5 year old and and 3 year old making PB&J.

Spinach and Mushroom Wrap

Ingredients

  • 1 multigrain wrap (I like Flatout brand)
  • 1 tsp vegan mayo
  • 1-2 tsp prepared pesto (you can leave this off and it would still be delicious)
  • A handful of fresh baby spinach
  • 4 oz mushrooms ( I like baby bella)
  • 1 Tbs low sodium soy sauce or Bragg's liquid aminos

Instructions

  1. Preheat a skillet over medium heat.
  2. Add the mushrooms and the soy sauce.
  3. Cook until mushrooms are softened.
  4. Meanwhile, spread the mayo and cilantro on the wrap.
  5. Place the spinach in the middle of the wrap.
  6. Top with the mushrooms.
  7. Roll up and eat.
