Pad Thai {Secret Recipe Club}

 

It’s time for the Secret Recipe Club reveal again!  This month I was assigned Chellie’s lovely blog Art From My Table.  I really enjoyed looking through her blog.  I had a hard time deciding which recipe to make but finally decided on the Pad Thai.

Thai food always makes up think of being pregnant.  But in a good way.  There is a really great Thai restaurant near my OB office and after the first OB visit for each of my 3 kids hubby and I would eat at this Thai restaurant.  Somehow, Thai food usually agreed with my “morning” sickness.  Frequently hubby would order the Pad Thai so I knew this dish would be right up this alley!

I was really glad I made this!!!  It turned out fantastic.  Just as good or better then Thai takeout.  I will definitely be making this again.  Hubby was disappointed that there weren’t any leftovers!

Pad Thai {Secret Recipe Club}

Pad Thai {Secret Recipe Club}

Ingredients

  • 1 block of extra firm tofu, pressed and drained, and cubed
  • 8 ounces rice noodles (I wish I would have used the whole box!)
  • 2 Tbs brown sugar
  • 2 Tbs lime juice plus more for serving
  • 3 Tbs soy sauce
  • 3 scallions, sliced (reserve some for garnish)
  • 1 garlic clove minced
  • 1 Tbs crushed red pepper (or to taste)
  • 1/2 cup cilantro, chopped
  • roasted and chopped peanuts for topping

Instructions

  1. Soak the rice noodles according to the package instructions.
  2. Preheat large skillet over medium heat.
  3. Combine the brown sugar, lime juice, and soy sauce in a small bowl and set aside
  4. Add a small drizzle of olive oil and the tofu. Cook until the tofu is browned.
  5. Remove the tofu from the skillet and set aside.
  6. Add another small drizzle of olive oil to the skillet.
  7. Add the scallions and the garlic and cook a couple minutes until garlic is fragrant.
  8. Add the noodles and the soy sauce mixture, tossing to coat the noodles well.
  9. Add the tofu and gentle toss.
  10. Add crushed red pepper to taste.
  11. Top with cilantro and the crushed peanuts.

  3. Love your story about eating Thai and being pregnant! My daughter introduced me to Thai food several years ago when we visited her in Chicago. Long story short, we love Thai! This looks like a delicious recipe. Great SRC pick.

  5. This looks and sounds delicious! Pad thai is one of my favorite dishes and I’ve never seen a pad thai recipe without eggs in it before… will have to give this one a try. Great to be in group C with you!!!

  8. Wow–I am so glad you posted this. I was just looking at a prepackaged Pad Thai and I just knew that there had to be a good homemade recipe out there!

  10. I LOVE Thai food but rarely get it because of hubby’s nut allergy. However he’s going on a business trip next month so I might have to go on a peanut bender :-)
