Banana Chocolate Chip Bread
Somehow 3 bananas managed to sit around on our counter long enough to be just right for banana bread. The fact that I managed to burn the motor out of another blender and therefore have not been making smoothies may have had something to do with this. Whatever the reason I was more than happy to turn those poor brown bananas into a delicious loaf of moist and chocolaty banana bread.
The bread lasted on our counter just about as long as bananas themselves usually do. You could of course leave the chocolate chips out. But why on earth would you want to do that?!
Ingredients
- 2 cups white whole wheat flour
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1/2 cup coconut oil
- 2/3 cup sugar
- 2/3 cup almond, soy or rice milk
- 2/3 cup hot water
- 1 tsp vanilla
- 1 1/2 cups mashed banana (about 3 bananas)
- 1 cup chocolate chips
Instructions
- Preheat the oven to 325 degrees.
- Coat a loaf pan with cooking spray.
- In a medium bowl mix together the flour, dry ingredients.
- Add the oil, milk, water, and vanilla to the dry ingredients.
- Combine well. Fold in the bananas and the chocolate chips.
- Pour batter into the loaf pan.
- Back for 45 -60 minutes, until a toothpick inserted in center comes out mostly clean.
- Let the bread cool in the pan for about 20 minutes before carefully removing to cooking rack.

I love banana bread! I make banana bread pretty often for the hubby to take to work. Delicious photos.
Looks delicious! We have too-ripe bananas that I just might have to use for this. And I buy those same choc chips.
