Mayo and Egg Free Potato Salad
The weather is getting warmer. The days are getting longer. Time to get out the grill! Here is a great side dish to serve along side your grilled goodies. This potato salad has no egg or mayo so it is great for taking on picnics. No need to worry about it sitting in the sun.
I think this salad tastes best if it sets for an hour or so to let all the flavors mix together. It is great as leftovers! I sent hubby some in his lunch and was secretly glad he didn’t have time to eat it. He didn’t get a second chance!
Ingredients
- 2 lbs red potatoes, cut into bite size chunks
- 3 stalks celery, chopped
- 3 green onions, chopped
- 3 medium carrots, chopped
- 1 bell pepper, chopped. I used red for the color.
- 1 Tbs capers
- 2-3 Tbs Dijon mustard
- 1-2 tsp apple cider vinegar
- 1 tsp dill weed
- salt and pepper to taste
Instructions
- Boil the potatoes.
- Drain the potatoes and set aside to cool a little.
- Place potatoes in a medium bowl.
- Add the remaining ingredients to the potatoes and mix well.

Even my husband (who’s really picky & doesn’t like his veggies) liked this potato salad. Very fresh with a nice crunch. I left out the capers cause I didn’t have any and added just a little agave syrup to the dressing to offset the tang of the mustard/vinegar, but not make it sweet. Thanks for the recipe!
