Granola Bars

I think my kids live for snack time.  If I had a dollar for every time I am asked if it is snack time yet I could afford to buy that nice Canon DSLR camera I’ve had my eye on!  Unfortunately I don’t.  So maybe I will start selling random items I find lying around the house.   Or I could start holding bake sales.  These delicious treats would definitely be one of the stars.

Getting back to the snacks, since my kids want snacks all the time I try to keep healthy snacks on hand.  They love granola bars but boxed granola bars can be expensive!  Not too mention full of sugar and other strange ingredients.  I set out to make a granola bar that was free from refined sugar as well as dairy free, egg free, and oil free.  After a few tries I finally got it right!

Feel free to use this as a base recipe and experiment with adding nuts, dried fruit, whatever strikes your fancy.

Granola Bars

Yield: 12 squares

Granola Bars

Ingredients

  • 3 cups oats (I used regular old fashioned not quick)
  • 1/2 cup crispy rice cereal (Optional. You could just add more oats)
  • 1/2 cup liquid sweetener. I used half honey and half maple syrup
  • 2 T peanut butter
  • 1 banana, mashed
  • 1/2 c unsweetened applesauce
  • 1 tsp vanilla
  • 1/4-1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray 8x8 pan with cooking spray and set aside.
  3. Mix all the ingredients together except the chocolate chips.
  4. Press into the baking dish, really pressing it down tight.
  5. Bake at 350 degrees for 20 minutes.
  6. Remove from oven and sprinkle the chocolate chips over the top.
  7. Once the chips have melted, spread them evenly over the top.
  8. Refrigerate until set.
  9. Cut into bars or squares.

Now the hard part is saving some for the kids.
