Weekly Menu Plan with Shopping List

So here it is!  The very first Thrifty Veggie Mama menu plan with printable shopping list.  This week I am only giving you dinner recipes but I hope to also include breakfast, lunch, and snacks in future plans.

Usually I just leftovers for lunch!

Sunday:  Quinoa and Black Bean Chili with salad


Monday:  Green Bean and Tofu Curry served over brown rice

Tuesday:  Haystacks with leftover Chili from Sunday


Wednesday: Honey Yogurt Waffles with Oatmeal Sausage Patties and Fruit


Thursday:  Quinoa and Black Bean Stuffed Peppers

Friday:  Homemade Pizza (use the dough recipe in this post, you can use any toppings you like)

Saturday:  Eggplant Parmesan

Note:  All of these meals are also vegan if you don’t top with the optional cheese.  You could try this pizza for a vegan pizza option.  The only exception is the eggplant parmesan.  I haven’t veganized that one yet!

Click here for the printable shopping list and menu plan.   Notice how many of the items are on the pantry basics list!  Keep a stocked pantry and you will have less shopping to do every week.
