Tofu Scramble plus Printable Pantry Basics List
I’ve frequently mentioned our love for breakfast for dinner. While I think my kids (and maybe even hubby) could have pancakes numerous times a week I tend to get a bit bored when I make something too many times in a row. Hence the reason for a food blog.
Another of my hubby’s loves is eggs. I am not as big a fan and am actually moving towards an egg free diet (a post on that coming soon) so I wanted to make something egg like for me while making hubby his fried eggs. I decided to make a tofu scramble.
Tofu scrambles are pretty commonplace among the vegan circles and are a breeze to make and very versatile. Sub in any veggies you want. Mushrooms would be fabulous in here. I had leftover black beans so I threw those in but feel free to leave them out.
Ingredients
- 1/2 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 package firm or extra firm tofu
- 1/2 cup black beans
- 4 Tbs nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cumin
- 1/4 tsp turmeric (mostly for color)
- salt and pepper to taste
Instructions
- Preheat a medium skillet over medium heat.
- Add the onion and pepper, saute until softened. Add the garlic and saute a couple minutes. Add a little water if they start to stick.
- Add the tofu and crumble with spoon, leave pretty big chunks as they will break up as you cook.
- Add the nutritional yeast, garlic and onion powders, cumin, and turmeric.
- Stir to combine well.
- Add the black beans and cook until heated through.
- Add salt and pepper to taste.
Also, I made a list of all my favorite grocery items to keep on hand. If you keep these items on hand, making healthy meals will be a breeze! I’ve now used the term “breeze” twice in this post. What can I say? It’s been very windy here lately and apparently I have wind on my mind!
