Smashed and Roasted Red Potatoes {Secret Recipe Club}
It’s a very special day today!!! Secret Recipe Club reveal day! It’s also my birthday
We celebrated my birthday this weekend. My parents were in town for the weekend so they stayed with the kids Saturday night while hubby and I finally went to see Hunger Games which I really enjoyed. I really loved the books and the movie stayed pretty true to the book. Yesterday family came over for dinner and dessert. I received some new clothes and some money that I am to only spend on myself! I’ll be doing some shopping soon!
But first lets talk about the Secret Recipe Club. Every month you are assigned a different blog within your group. Your task is to choose a recipe from your assigned blog to make, photograph, and write a post about. This month my blog was Danielle’s blog Hugs and Cookies XOXO. Danielle has tons of great looking treats on her blog. Definitely not the blog to be assigned when I am trying not to eat sugar! There were some very tempting looking recipes on Danielle’s site so check them out.
I chose this recipe with potatoes because I love potatoes of all kinds. I had never prepared potatoes this way so wanted to give it a try. I will definitely be making these again. I used less oil and left off the cheese. They would be great with some fresh rosemary but I didn’t have any.
Ingredients
- 2 lbs red potatoes
- cooking spray
- salt and pepper
Instructions
- Boil the potatoes until tender. Drain.
- Place aluminum foil on a baking sheet. Spray the foil with cooking spray.
- Place the potatoes on the baking sheet and smash them to about 1/2 inch thick.
- Spray the potatoes with cooking spray and sprinkle with salt and pepper.
- Bake in 450 degree oven for 45 minutes.

i also love potatoes. anyone who says they don’t love potatoes is lying. i’m convinced of it.
i can imagine these would be kind of like stuffed potatoes (one of my favorite ways to eat potatoes) – sans the skin.
