Chocolate Peanut Butter Pie {Pantry Basics} And Giveaway!

Before talking about our pantry basic for today lets talk fashion for a little while.  I am clueless when it comes to fashion and have bought very few pieces of clothing in the past 6 years that didn’t have the word maternity on the tag.  Most days I am sporting the yoga pants and sweatshirt look.  I finally decided it was time to update my wardrobe.  My friend Nancy became my fashion consultant and emailed me a list of wardrobe basics to get me started while still not spending a fortune.

This weekend hubby was nice enough to take me shopping for some new clothes!  I got a great start on my new wardrobe.  One major purchase was a pair of skinny jeans.  They will definitely take some getting used to but I am trusting Nancy on this one!!!  I still have a few things to get to complete my list but I do have a birthday coming up :)

Ok, now onto a totally unrelated topic.  Peanut butter.  Peanut butter is definitely a staple in our house.  I love to put it in smoothies, on my oatmeal, or in a sauce.  And the kiddos eat PB&J sandwiches about 4 times a week.  Or “peaner and jelly” as they like to call it.

Peanut butter is a good source of protein for a vegetarian diet with 8 grams of protein in 2 Tbs.  It also contains fiber so it makes you feel full faster and longer.  2 Tbs contains 188 calories and healthy unsaturated fats so it should be used in moderation.  According to Livestrong “Peanut butter contains resveratrol, the phytochemical that protects plants from disease. Found in grapes and red wine resveratrol may also help minimize inflammation, which can cause various diseases. The presence of phytosterols, namely beta-sitosterol, campesterol and stigmasterol, also helps to block the absorption of “bad” LDL cholesterol.”

One piece of advice is to make sure that your peanut butter is oil free and doesn’t have a lot of added sugar or salt.  No one needs extra fat in their peanut butter!

Peanut butter was also made to go with chocolate.  Some of my favorite desserts combine peanut butter and chocolate.  (Like Reese’s!)  I created a peanut butter and chocolate pie that you could actually argue to be healthy.  This pie is refined sugar free, gluten free, and dairy free.  And delicious!

Chocolate Peanut Butter Pie


    For the Crust
  • 1 c dates, pitted
  • 1 c nuts (I used almonds and walnuts)
  • 1 tsp vanilla
  • 1/4 c cocoa powder
  • For the Peanut Butter Filling
  • 1/2 block silken tofu (I used Mori-Nu Extra Firm
  • 2/3 c peanut butter
  • 1/4 c non-dairy milk (I used Silk Almond)
  • 2 T honey, agave, or maple syrup
  • For the chocolate layer
  • 1/2 block silken tofu
  • 1/2 c unsweetened cocoa powder
  • 1/4 c non-dairy milk
  • 1/4 c honey, agave, or maple syrup
  • 1 tsp vanilla
  • pinch of sea salt


    For the crust
  1. Place the dates in food processor or blender and pulse a few times to break them up.
  2. Add the nuts, vanilla, and cocoa powder.
  3. Process until chopped fine and well mixed.
  4. Press into bottom of pie dish.
  5. For the Peanut Butter Layer
  6. Place 1/2 the block of silken tofu, the peanut butter, honey and milk in blender or food processor and blend until smooth. Add a little more milk if it isn't blending well.
  7. Pour on top of the crust.
  8. For the chocolate layer
  9. Place the other half of the silken tofu, the cocoa powder, milk, honey, salt, and vanilla in blender or food processor and blend until smooth.
  10. Pour over the peanut butter layer.
  11. Refrigerate at least 1 hour or overnight. The longer it refrigerates the better it will thicken.
  12. Top with vegan "cool whip"

Now you have an opportunity to win some peanut butter of your own!  The good folks at Krema sent me two jars of their fantastic peanut butter to try.  What I love about this peanut butter is that it doesn’t have any added stuff.  No extra oil, no salt, no sugar.  Just peanuts.  It is very creamy.  You do have to stir it when you first open it but after that it is good to go.  If you want it a bit thicker, store it in the fridge.  And now Krema wants to give 2 of my readers a chance to try their peanut butter too!  2 lucky people will win 2 jars of Krema peanut butter.

  1. I had no idea peanut butter contained resveratrol. (Not that this will stop me from also getting a good does in with a glass or 2 of red – LOL!) Love this recipe!

  4. Is there something I can use in place of tofu? I try to keep down on the soy intake.

    • I have made a pudding out of avocado so you could try blending up an avocado in place of the tofu in the chocolate layer. Maybe in the PB layer use a can of coconut milk, put the can in fridge overnight and use the thick top layer that forms. Let me know if you try it!
