Rosemary Garlic Foccacia {Secret Recipe Club}

It ‘s Secret Recipe Club time again!  In case you are wondering what the heck I am talking about I’ll fill you in.  In Secret Recipe Club you are assigned a different blog from your group every month.  Your task is to browse the recipes from that blog and pick a recipe to make and post about.  You keep it a secret all month until the reveal day.  We took a break in January so I have had to keep this one a secret for a long time!

I was assigned the blog 365 Days of Baking.  This blog is written by Lynne who recently became a SAHM like me!  There seems to be a common theme in the blogging world, become SAHM, start to write a blog!    Lynne has a dog named after one of my secret crushes-Tom Brady!  Well, hubby is aware so I guess it isn’t too secret.

Lynne has so many fabulous looking recipes on her site that you should definitely check it out.  I decided on Rosemary Garlic Focaccia  and I am so glad I did!  It is really delicious.  I may just have to keep some in the house at all times now.  I am already planning on making an olive version.

Rosemary Garlic Foccacia {Secret Recipe Club}

Yield: 2 loaves

Rosemary Garlic Foccacia {Secret Recipe Club}

Ingredients

  • 1 1/2 teaspoons yeast
  • 1 1/2 cups very warm water
  • 4 cups all-purpose flour or bread flour
  • 1 teaspoon salt
  • 2 Tbs fresh rosemary, chopped fine
  • 2 cloves garlic, minced
  • 1/3 cup olive oil
  • Olive oil for drizzling
  • 1/2 cup freshly grated Parmesan cheese (I left this out)
  • Coarse sea salt for sprinkling

Instructions

  1. Add the yeast to the water and let is sit for about 5-10 minutes.
  2. Combine the flour and salt in the bowl of a stand mixer. Add the olive oil. Then pour in the yeast mixture and mix until just combined. The dough should form a sticky ball.
  3. Place dough in a bowl that has been coated with olive oil (you can also warm the bowl in the microwave) and cover with plastic wrap or a towel. Let sit for 1 1/2 hours.
  4. Remove the dough to a lightly floured surface.
  5. Place the rosemary and garlic on top of the dough and lightly knead it into the dough until it is dispersed throughout.
  6. Divide the dough into 2 equal halves. Roll each half into an oval or rectangle.
  7. Place each on a baking sheet that has been coated with olive oil. Drizzle with a little more olive oil and sprinkle with salt.
  8. Cover with plastic wrap and let rest for an hour.
  9. Preheat oven to 400 degrees.
  10. Remove plastic wrap. Use your fingers to make little dimples all over the top of the dough.
  11. Sprinkle with a little more salt and olive oil.
  12. Bake for 35-40 minutes, until golden.
