Menu Plan Monday~February 27
The last menu plan of February! We are still doing the detox that I mentioned last week. We are now eating soy and some grains but still avoiding a lot of gluten as well as no processed foods and no refined sugar. Yesterday I went to a baby shower and was able to resist Reese’s Peanut Butter Cups and cake!
It has actually been fun to try new recipes and try things that I wouldn’t normally make like Beet Soup! The menu this week features recipes from the latest issue of Vegetarian Times magazine. I haven’t chosen meals for Friday through Sunday yet because I am going to get more groceries on Thurs or Friday when the grocery budget starts over
Monday: Chili Lime Noodles
Tuesday: Leek Hash with Polenta
Wednesday: Leftover Chili
Thursday: Lentil and Quinoa Pilaf over Wilted Greens

I feel like I need a detox! ugh. Horrible eating choices over the weekend. BTW, your beet soup recipe is the 3rd beet recipe I’ve seen today… perhaps I need to eat more beets.
Great sounding menu. I especially love the sound of Lentil and Quinoa.
