Vegan Lettuce Wraps
We have had a pretty relaxing week here at the TVM household. Hubby actually had back surgery last Friday so he has been home from work this week. It has been nice to have him around during the day but has thrown our schedule off a bit. We have stayed up until after 11 almost every night and been sleeping in until almost 8 every day! Well, I still wake up to feed Little Man but then we have gone back to bed. Monday will be a rude awakening I fear! Hubby is doing well and his back feels better everyday. The hardest thing is that he can’t lift anything over 10 pounds so can’t lift any of the kiddos.
But because he was home I actually got to run outside yesterday! We have had a bit of a warm spell here in Michigan. Today it is almost 50 degrees! It felt great to run outside. I did almost 3 miles. I am determined to get back into my running routine. I always feel great after a run.
After a little break from cooking I am back into cooking mode and oh boy did I cook up a good one! Oh my these are delicious! I made them last week but didn’t take any pictures or really take notes about my process. They turned out so well that I knew I had to make them again and share them with you all. Hubby didn’t mind. These wraps were devoured. They are actually really easy to make and I think even a non-veg would like them.
For this recipe I used soy curls. In case you aren’t familiar with this ingredient here is how the manufacturer Bulter foods describes them: “Select certified Non-GMO soybeans grown without chemical pesticides are soaked in spring water. Then the soybeans are cooked and delicately textured after which they are dried at low temperature thus ensuring the natural goodness of the whole soybean high in fiber and omega-3. Soy Curls™ are one of the most pure, healthful products on the market containing no chemicals, additives, or preservatives.” I bought my Soy Curls from Country Life natural foods but also saw them on Amazon.
I was pleasantly surprised by this product. The texture came very close to chicken. They are very versatile and I will definitely buy more to try in different dishes. If you can’t find the Soy Curls you could also make this dish with Morningstar Farms chicken strips or a similar product.
Now for the recipe.
Ingredients
- 3 cups soy curls
- 1 T "chicken" seasoning or Not Chik'n bouillon
- 1 onion chopped
- 1 tsp garlic
- 1 cucumber thinly sliced
- 1 large carrot, thinly sliced
- 1 cup cilantro roughly chopped
- 1 head Bibb lettuce
- 2 1/2 T Bragg's liquid aminos or low sodium soy sauce
- 1 T peanut butter
- 2 T honey
- 1 tsp garlic
- 1/2 tsp ginger
- 1/8 tsp sesame oil
- Now, preheat a large skillet over medium heat. Add about 1/2 tsp olive oil. Add the chopped onion and garlic. Cook for a couple minutes, until the onion softens. Add the soy curls (drain the water). Saute about 10 minutes. Add the cooking sauce you have prepared. Stir to combine.
- To Assemble
- Mix the soy curl mixture, cucumbers, carrots, and cilantro in a large bowl.
- Place about 2 T mixture onto lettuce leaf. Wrap and then bite! Delicious!
Instructions
- In a small bowl, mix together all the ingredients for the cooking sauce and set aside
- Dissolve the seasoning in 1 cup hot water in a medium bowl. Add the soy curls and add enough hot water to cover the curls. Let sit for 10 minutes while you prepare the cooking sauce. Note: you can skip this step if you use a product like Morningstar Farms Chicken Strips.
- Now, preheat a large skillet over medium heat. Add about 1/2 tsp olive oil. Add the chopped onion and garlic. Cook for a couple minutes, until the onion softens. Add the soy curls (drain the water). Saute about 10 minutes. Add the cooking sauce you have prepared. Stir to combine.
