Menu Plan Monday~1st of 2012!
Happy New Year! It is always kind of sad when the Holidays are over. We still have all of our Christmas decorations up because I am just not ready to take them down. We had a really great Christmas. We hosted Christmas at our house so we had 20+ people here! It was a bit hectic but fun. I am excited to try out some of my new cookbooks I received as well as my new donut pan! I plan on testing that this afternoon.
Our New Year was very low key. Hubby had back surgery on the 30th so we just stayed home and watched some movies. He is actually home from work this week recuperating.
Did you make any New Year’s resolutions? I made some goals for the New Year. One is to run at least a half marathon this fall, maybe a full marathon. Before I got pregnant with baby #3 I ran a half marathon. Well, I actually ran the half when I was pregnant but didn’t know it yet. I tell hubby this is why he beat me by 8 minutes! I have had a hard time getting back into the swing of running but think it is time now. Little Man is now sleeping through the night so I am actually getting some good uninterrupted sleep now. No more excuses for not getting up early!
On to the menu for this week:
Monday: Pesto Marinated Tofu
Tuesday: Sloppy Joes
Wednesday: Lemon Corn Waffles with Blueberry Sauce (hubby’s request)
Thursday: Lettuce Wraps (I actually made these last week but they were so good I am making them again so I can photograph them and share them with you all!)
Friday: Pizza
Saturday: Out of town for the day (My little sister is having a white coat ceremony at Michigan State University School of Veterinary Medicine as she transitions from course work to clinical work)
Sunday: Butternut Squash Lasagna

Looks like a great menu. Good luck with your running. I’ve been trying to motivate myself to start running. I tried between babies and never got there, and now I’m thinking about it again. Just haven’t figured out the details or the inspiration.
Thank you! I really love how I feel when I am running. Beginning is the hardest part! I recommend signing up for a 5K to motivate yourself if you are just starting
