Lemon Corn Waffles with Blueberry Sauce and Giveaway!

 

Today is the anniversary of my first post on Thrifty Veggie Mama!  A lot has changed since I posted my first recipe on this site.  I had a baby and we moved into a new house.  I have also come to really love doing this blog.  Thankfully I have learned a few things about taking pictures of food but still have so much to learn in that area.  In the beginning I was content to snap a quick picture before digging into dinner, not really thinking about the final outcome.  Now I am really loving the photography aspect of food blogging.

I began this blog because I have a passion for healthy eating.  When we first became vegetarian it was intimidating.  What do I cook now?  How to I make food my kids will still want to eat?  I did a ton of research and read a ton of cookbooks.  I didn’t find a lot of vegetarian food blogs with food I thought my kids would eat.  I wanted to share what our family was eating with others in the hope that it would make healthy eating a little easier.  And Thrifty Veggie Mama was born!

Just as the first year of a babies life is full of growth and learning, the first year of this blog was the same.  Now that I have begun to learn the basics I hope to let more of my personality show in the next year.  Hopefully, you will get to know a little more about me and not just what I’m cooking.  That being said we will still have great recipes like this one.

My hubby requested this meal this week.  I really don’t like making waffles that much (they are such a pain to get out of the waffle iron!) but the sacrifices we make for our loved ones!  It was worth the burned fingers though.  I had forgotten how good these are!  These waffles are whole grain and vegan if you use non-dairy milk and yogurt.  (And I haven’t forgotten about the giveaway!  You just have to wait until the end of the post!)

Lemon Corn Waffles with Blueberry Sauce

I don’t remember where I adapted this recipe from!  I think Veganomicon.

Made 6 Belgian Waffles

1 1/4 c white whole wheat flour
3/4 c corn meal
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/4 c sugar
1/4  cup oil
2 c nondairy milk ( I used almond)
1/4 c non dairy yogurt like soy or coconut
zest and juice of 2 lemons
 
Mix all the ingredients together and stir until just combined.  Pour batter into preheated waffle iron.  Cook until browned (according to your waffle iron instructions.)  For my Belgian waffle iron I used 2/3 cup batter.  Keep warm in 200 degree oven while you make the remaining waffles.

Blueberry Sauce

1 1/2 T arrowroot powder (or cornstarch)
16 ounce blueberries (frozen or fresh)
1/4 cup water
1/2 cup maple syrup, honey, or brown rice syrup
1 tsp vanilla
 
Combine the arrowroot and blueberries in small saucepan and stir to coat the blueberries.  Add the water  and syrup and bring to boil.  Reduce to simmer.  Cook until thickened.  Remove from heat and add the vanilla.  Spoon over waffles.

  23. I have two big bags of frozen Blueberries in the freezer. As soon as I get back from holidays I am going to have to give this recipe a try. I will likely use one of my homemade milks, such as Oat milk. Love the combination you have used, especially with the added lemon juice. MMMM
