Spaghetti Squash with Pumpkin Sage Sauce

It is Secret Recipe Club reveal time again!  After my first post for the Secret Recipe Club I couldn’t wait to get my next blog assignment.  This month I was assigned Chelsy’s blog  Mangia.  I was contemplating mushroom soup or chocolate peanut butter cups but decided on spaghetti squash with pumpkin sage sauce.  I love pumpkin and had just come back from my parents’ house with some loot from their garden including  a couple spaghetti squash.

My hubby and kids aren’t big fans of spaghetti squash so I made some spaghetti for them to have with the sauce.  I made a couple minor additions to the original recipe like a little bit of nutmeg and using milk and vegetable broth instead of the water.

This sauce is very comforting and creamy even though it doesn’t have any cream!  This dish is gluten free and dairy free.

Spaghetti Squash with Pumpkin Sage Sauce

Yield: Serves 4-6

Ingredients

  • 1 spaghetti squash
  • 1 15 ounce can pumpkin puree
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 1/2 cup vegetable broth
  • 3/4 cup milk (I used unsweetened soy milk)
  • 1/8 tsp nutmeg
  • 1 tsp chopped fresh sage leaves
  • salt and pepper to taste

Instructions

  1. Cut the squash in half and scoop out the seeds. Drizzle the squash halves with olive oil, 1 clove minced garlic, and 1/2 chopped shallot. Place cut side down on baking sheet and bake at 450 degrees for about an hour.
  2. Preheat a large skillet over medium heat. Add about 1/2 tsp olive oil and the rest of the garlic and shallots. Saute about 5 minutes.
  3. Add the pumkpin, milk, and broth and cook until bubbling. Reduce heat and simmer about 15 minutes. Add the sage, nutmeg, and salt and pepper. Add more milk if the sauce is too thick.
  4. Scoop out the fleshy strands of the squash. Top with the sauce. Garnish with more sage if you wish.

  7. I love spaghetti squash, but my kids…not so much. So I think I’d do the same thing with this wonderful pumpkin sage sauce. It just looks fabulous! : )

  8. Spaghetti squash is fun! But I’m the only one that would eat it. The pumpkin sage sauce sounds wonderful, think I’ll take a cue from you and serve it with pasta.

  9. Pumpkin + sage is never NOT a good combination. Yum. I would have never thought to put it on spaghetti squash like this!
