Ritz Cracker and Peanut Butter Cookies
I don’t know about you but it just does not feel like Christmas is 5 days away. I was hoping for some snow this week to help lend a more Chrismas feel but it looks like there will not be a white Christmas here. In fact, tomorrow it is supposed to rain all day. I would much rather have some snow. I did finally wrap some presents today so that did help with the Christmas spirit just a bit. I have lots of baking the rest of the week so I will blast some Christmas music while I cook and will be as jolly as an elf by the weekend.
Speaking of baking. Today I am sharing my favorite Christmas cookie with you. And bonus! It is super easy and actually doesn’t require any baking. And it only requires 3 ingredients! How simple is that!
My mom found the recipe somewhere years ago, I don’t know if she even remembers where. It has been a Christmas staple every year.
Ritz Cracker and Peanut Butter Cookies1 24 oz package candy coating (milk or white chocolate) 2 sleeves Ritz crackers Peanut Butter (sorry I didn’t measure how much I used!)
Spread some peanut butter on a cracker. Top with another cracker.
Place your candy coating in a microwave safe dish and microwave in 30 second increments until melted. Don’t microwave too long or it will not work for coating the crackers. Also DO NOT use milk to try and thin the chocolate. Trust me, it doesn’t work.
Once melted, place a cracker sandwich in the chocolate and use a spoon to cover it in chocolate. Take it out of the chocolate and place on wax paper until chocolate hardens. You can top with sprinkles if you like.
I only used the white chocolate for this batch but I have done both. My husband actually prefers the milk chocolate.
