Menu Plan Monday~Nov 7

We had a beautiful weekend here in Michigan.  We got to spend lots of time outside enjoying the sunshine and crisp temperatures.  We went to a great metro park near our new house and had a great time.  I foresee us spending lots of time there!  I think the highlight of the trip for my 4 year old was seeing a bride getting photos taken.  She was in awe!  “What kind of shoes do you think she is wearing?”  “What do you think her ring looks like?”  She loves all things dress up and fancy!

This week I didn’t really get a menu planned.  That means I went to the grocery store with no real plan in mind.  I made a list of some basics I knew we were out of and bought some fresh produce.  We always have a variety of dried beans and grains on hand so I knew I would be able to come up with some good meals.  This made me think that maybe I should do a series of posts on pantry staples so that a wholesome meal is never far away from your table.  Hmmm….maybe a good idea!

Anyway, here’s my menu for this week.

Monday:  Pumpkin Gnocchi (this was from the freezer, after grocery shopping with the kiddos I don’t have the energy for cooking!)

Tuesday:  Quinoa salad with roasted sweet potatoes and kale

Wednesday:  Breakfast Pockets

Thursday:  Spaghetti Squash with Roasted Brussel Sprouts and Chickpeas (Hubby will love this one!)

Friday through Sunday:  Going out of town to my parents!!! Which means no cooking for me!  (Mom, that’s not the only reason I love to come home.  Honest!)

And I thought I would finally share a picture of my little ones.  I know you have all been dying to see pictures right :)
