Chocolate Chip Blondies-Vegan and GF


My husband has requested that I limit my baking for the weekends.  I find it impossible to do that though.  Sometimes I get the urge to bake something!  I guess I need to find someone to share the goodies with.  We just moved into our new house about 4 weeks ago so we don’t really know the neighbors that well.  Is it strange to just knock on your neighbor’s door bringing sweets?  Hmm…I will definitely bake some stuff for Christmas and share that.  Maybe that will show them that I am not a crazy baking lady trying to poison them.

Anyway, when I saw this recipe I thought I could disregard my husband’s plea.  The recipe for these blondies uses chickpeas and no flour or eggs!  That means it isn’t in the dessert category, right?

My 2 year old and 4 year old helped me make these and thought it was so funny that we were putting beans in them!  I swore them to secrecy though.  My 4 year old giggled the whole time my husband was eating his.  We finally spilled the beans (ha ha!) and he said he would never have known that there was a secret ingredient in them.

The girls loved licking the batter off the beater and bowl.  These bars are really good and no one would suspect that they are healthy!

I found the recipe on a great blog called Chocolate Covered Katie.  She has a lot of great looking desserts on her site.  And their healthy so I can make them during the week!

  2. I did a variation with peanut flour & carob chips. Delicious :) I prefer chatfield’s carob chips. They taste so much better than any other I’ve had.

    • I really need to try carob chips sometime but love chocolate so!

  4. Wondering if you could use a blender? What the difference may be.

    • I think you could definitely use a blender. You just will need to stop and scrape the sides down a few times.
